Ordered the pho áp chảo and the noodle was cooked perfectly! The outside was crispy while the inside still soft. The ingredients were fresh and quality!

I love Essence!!! I love the vibes and food here. Many years ago, we didn't have many bò né places around OC that were worth trying but I am so happy that this place is around and within traveling distance. My favorite dishes are the bò né wagyu, nui xào bò (sautéed macaroni & beef), and bột chiên (fried rice cake with eggs). Their portions are huge and so satisfying. Service is as good as you can receive for a Vietnamese restaurant. They get busy so it can take awhile to get your food and get the server's attention.

I came to Essence and Drinks and Dining to try their Bo Ne, but ended up ordering their Shrimp Garlic Noodles ($14.25) and Pho Ap Chao Do Bien ($14.25). The garlic noodles were just okay... it was good, but unless you were really craving it, it's nothing special. The Pho Ap Chao Do Bien however, was REALLY good! If you've never had Pho Ap Chao before, think of pan fried crispy pho noodles. What I like about Essence Drinks and Dining is that they make the crispy noodles medium think with a very crispy exterior. It's like eating a noodle hashbrown. The gravy is not too thick or thin and I like it with the seafood veggie. Pho Ap Chao is also offered with beef or just by itself. Service is okay, it depends who you get. The restaurant is open and airy, but what I don't like is the amount of flies and bugs inside the restaurant. I was dodging a bee throughout my meal and it was a bit unpleasant. Also, they keep their doors open, so the smoking outside comes in and you're second hand smoking throughout your meal if you've got smokers outside.
